Prune Cake with Lemon Frosting

Because it is the Christmas season I will start things off with the recipe to one of my favorite holiday treats.  This always says Christmas to me, I hope you like it!

Prune Cake with Lemon Frosting
Cake Directions
Cream together in large mixing bowl:
1 cup sugar
1/2 cup shortening
Then add: 2 eggs

In a separate bowl mix:
2 cups flour
1 t. ground cloves
1 t. ground cinnamon
1/4 t. salt
1 t. baking powder

*In a medium saucepan cover approximately 3/4 cup pitted prunes with water.  Stew pitted prunes till they plump up.  Save the water that the prunes were stewed in for later.

In a blender mix:
1 cup stewed and pitted prunes
1t. baking soda
1 cup prune juice (left over water used to stew the prunes or you can use store bought prune juice)

Now in the large mixing bowl with sugar mixture add dry mix and prune mix, alternating between the two until everything has been added and mixed well.

Bake in greased bread loaf tins at 350 for apx. 50 minutes or until knife comes out clean.

Lemon Frosting:
1/2 cup softened butter
1/2 cup shortening
1/8 t. salt
1& 1/2 t vanilla
4 cups powdered sugar
1/2 cup fresh lemon juice
mix well and when bread is cooled spread over each slice and enjoy!
